Why do Store administrator permissions stay enabled when I untick them?
Short answer
Store administrator retains full permissions regardless of individual ticks, except its salesperson-picker choice.
Duplicate the role to create a limited custom role, then edit and assign that copy. Review its record scope and allowed app surfaces as well as the individual permissions.
