Short answer
Calculating… means Shopify has not returned the saved quote or order's tax yet.
POS checks for about 30 seconds, then offers Not calculated yet · Refresh if needed.
Tap Refresh to request the latest calculation. Payment waits until tax is ready; do not use an earlier estimate as the confirmed amount.
